街市裡的靜謐空間，相對於 HUGH dessert dining 處理暗的城市街角，這回由暗轉明端出一道新品：空間的是道“お菓子 okashi”，製菓的技法來自雙手的流動，成型時仰賴的手法路徑，呈現流轉之美，以無形的細緻精巧為題，試圖練切出空間具膚覺的感知質量。
